Try to contact a couple exhaust shops in your area, tell them what you want to do, Are you doing pretty much a build up straight pipe, if so it will take time to fab up and then mount in. Most of the cost is the labor, not materials . Pipe is pipe.

It will be loud and will drone if custom straight all the way back. Unless they change it up or do something to it. Your back hatch might vibrate a bit under certain revs. I would do a JCW or milltek non res and call it a day.
JCW with resonator delete is loud , nice sound and pops and cracks. The milltek non res is loud also. But not as loud as a full straight pipe ( but then you have drone and vibrations in the back ) .
Performance and loud. I'm wanting to do a stage 2 maniac tune.
If you want to do stage 2 you'll need a catless/high flow cat downpipe as well as an exhaust system. I don't know if the stock JCW exhaust is up to the task. The Invidia Q300 system (which I have) is a popular choice around here. It drones a bit more than something like a Milltek but it gets the job done and is significantly cheaper than most systems out there. As for a downpipe there are plenty of used ones on the market here. You can also message a user on here with the name MarioKart. Mario sells super high quality downpipes, and is a Manic dealer if you happen to live in/near California and need a tuner. Between Mario's downpipe and the Invidia system my car is really loud, and drones quite a lot. It's all about whether you are comfortable with that. There's also the loudest option which would be a full custom straight pipe. That would drone a ton but get you the most performance and might be the cheapest option depending on the shop and how much they charge. Keep in mind your state's emissions regulations as well. if you live in a state that does sniff tests or visual inspections for emissions, you'll fail unless you swap in the stock exhaust components for the inspection. If your state does OBDII tuning the manic tune will get rid of the check engine light and you can pass. Or Mario's downpipes don't throw a light to begin with because of how he spaces the O2 sensors
Should I do a muffler, resonator, and 2nd cat delete? How much would it run average to get the work done?
Check the classifieds, Ive seen some decent cat-back units for sale. I personally have a Borla cat-back and love it. I don't have a downpipe but according to MarioKart, a well known member and Manic tuner on this forum, the downpipe would increase sound by approximately 15-20%

Try going catless before getting a new exhaust. You might like the sound. My favorite set up, that was deep, loud on the outside, but no drone inside the car was my stock JCW 2.25" exhaust with 4" tips. It also was good for over 300whp
