Now, I noticed there are a few spots where the lines coming from the stock cooler connect to a few other spots in the general cooling system. Do I need to plug these somehow?

Edit: also wondering what on earth some of the parts included are... springs? small black circles? small black circles with tails??? mysterious black rectangles?

As far as what you have circled, since you are alleviating the water cooling/heating part of the system to convert to air cooling, then yes you can plug the lines that went to the OEM cooler.
You will either want to cap them right at the T's or alleviate the T's all together replacing them with straight couplers, or longer hose to get rid of the junction completely.
You really don't want to cap them down near the OEM cooler as it will introduce areas to trap air in the cooling system. (Only solution down near the OEM cooler would be to loop the ends together to keep some circulation there, but you're far better off capping the T's)
As far as the springs, best guess is something to do with dampening vibration of the heat exchanger or the fan, and the circles with the tails look like zip ties for the hose that enable you to pull the zip tie tight without risking crushing the hose. (Actually a pretty good idea and I'm surprised to see that amount of detail in a kit at this price point)
Thank you so much, I did a wee bit of research and quickly realized an aftermarket performance oil cooler is a bit overkill for a daily driver lol, so I’m selling the kit on marketplace since shipping to China to return it is about 300 CAD.

Yes, pretty much so.
Plus, the OEM using coolant, and coolant heating up quicker than oil, it also helps to bring the oil "up".to normal operating temp quicker on cold days and early ruining of the engine.
