Thought I would share my thoughts on the EBC stuff and how my brake job went last night... Took me 2 hours to do the fronts with only one dumb moment. I didn't realize there is a difference in the pads for the inner/outer sides and put both inners on my right side at first. 
Rotors: EBC Slotted Ultimax Rotor (wish they stayed black after use!)
Pads: EBC Red Stuff 3000 series
First impression is very good, high quality, and I can't wait until these things get broken in! Just got some SS lines to compliment and will be doing those in the next few days.

I have Reds and I choose them because they are a little bit more aggressive then Greens plus with the chance of doing track time Greens are not reccomended for that. In overall performance it goes green, red, blue, yellow. Blue is reletively new and it is suppose to meet a mix between yellow and red so the really should have been orange instead of blue.
I went with the EBC Sport rotors and red pads F/R. Got 6K on them and am loving them. On a recent trip thru the Rockies they never faded, even in driving downpours. Takes forever to properly bed them in, but it's worth it!
Looking to get some new brakes for my '06 S. This may be noobish but can I install the EBC brake pads with my stock rotors?
Also, does the sensor need to be replaced every time the pads are?

no, the sensor is only replaced after it is activated. It is a 'consumable' sensor. Replace pads b4 the sensor is used and you can re-use it.

+1 on reusing sensors. I also used powerslot rotors becuase prior expierence with them. If you use stock rotors make sure that you use new ones because the old ones are not really meant to be resurfaced and if you put new pads on them you won't get as long a life out of them.

I chose the red's for the same reasons above. I have been putting the miles on them and can't wait until I can start to beat on them...
I did have to replace my sensor as it tripped the week before I changed them out... so close!
As for RedStuf with stock rotors, yep, might go green depending on the type of driving you do though. Agreed with what Portho's said, if its time for pads, just get rotors too, stock, or similar are fairly cheap, and that way you ensure proper a proper braking setup with no odd wearing/sounding/vibrating/etc...
