Yes, I still need a more "personalized" opinions on this very serious matter.

2011 R56, Metallic Orange with white top, and here's what I know for sure so far:

I want to stay with 16" wheels, but 7" wide, and use 205/55/16 tires so I would get a slightly taller sidewall.

I'm really, seriously thinking on doing a mild drop after I get wheels/tires installed, how much? Won't know until I see the wheels installed since drops vary from 1" to 1.5".

I'm having a little trouble finding wheels that I really like, because I want to find something that "looks" concave. Also, keeping in mind I want to do a mild drop, which offsets would work in my situation? Of course I would stay away from 20mm offset (or lower) but I'm sure people here have real world experience on the matter. Pics of yall's rides would be sweet as well.

You will get a stock feel with any offset higher than 35.
I have an r56 an am personally looking for 17x8.5 et25/30

The problem you'll find is that Mini-friendly offsets (+20 and up, usually more than +30) all but eliminate any concavity. I have seen some very aggressive fitments (in the R56 pictures thread) that manage it, but it's not easy and involves stretched tires.

Well, last weekend I got home and my wife had organized the garage and I realized I had a set of wheels and tires I bought cheap a few months ago and thought, what the hell.

Before:












And, after I installed said wheels and tires:







I knew I was going to replace the tires since they were 205/40/17, but I was pleasantly surprised about the ride quality. Still firm but way more compliant, and not jarring anymore over potholes and expansion joints. Those runflats REALLY make this cars ride like utter crap.

And, yesterday I installed new tires, but 215/45/17 this time, and this is the end result:










I really like how it rides now, but I'm still debating whether to drop it or not....

BTW, these wheels are Konig Holes, 17x7, ET 45, which make the wheels stick a good centimeter outwards. So far I'm digging them.

Not that my car has any of your desired specs but I have Sparco Assetto Garas 17x7 and they sit pretty flush. Offset is 37 mil. Not dropped yet but I have H&R springs at the ready once winter is over.

Car looks nice! In my case, if I decide to drop it, I will re-evaluate the wheel offset, and maybe get another set on whatever offset I want, or get either 5mm or 10mm spacers and bolts.

That's probably you best bet. If you aren't flush enough you can space it out. I just got lucky that the wheels I liked best had a pretty good offset.
