it depends on where you're driving, what time of day and mood....
do you have any particular mood to match?
for example:
a little drum and bass for certain moods.
Nick Cave for a sarcastic evening.
Johnny Cash for anytime.
Reich to stay mellow.

The following music is more spirited driving music, definitely not for mellowing out (Especially not the last few choices).
I've been in a U2 kind of mood this week:
U2 - Elevation
U2 - Vertigo
Other choices (some that I have discovered recently, keeping in mind I'm not a big music buff)
Rob Dougan - Clubbed to Death (Kurayamino mix)
DJ Tiesto - Adagio for Strings
The Zutons - Pressure Point
Jet - Are you going to be my girl (suffered from severe overplay though, might have to put this track on hold for a while).
Rob Zombie - Two Lane Blacktop
Static-X - The Only

OK, now I am really not crazy (maybe just a little) but the best ever is;
Hebert Von Goisern
You have to get his CD's in Germany although it's worth looking for them if you're there.
Needs to be played very LOUD.

Steppenwolf: "Born to be Wild!" Get your motors revving....head out on the highway....looking for adventure....
Agree that Johnny Cash is great motoring music! I'm on my annual springtime roadtrip and seem to be wanting to listen to Neil Young a lot!

One thing we need to keep in mind here is that particular types of music will favor particular types of driving. Clearly, a faster-paced, heavier or "louder" style of music will likely induce faster and more aggressive "at the limit" driving, whereas a more calm, relaxed type of music will more likely encourage calmer, "cruising" type of driving.
That being said, since I tend to fall into the "faster" category more often than not...
I want to first say that I was never really into the whole electronic/techno/trance/house type of music at all, and for the most part I still am not. However, there are some particular "electronic" artists that I believe do a great job of bringing the same intensity to a wider audience (i.e. more mainstream), since they are more original and "inter-genre" in much of their music. The first two artists that allowed me to discover this path are Moby and Fatboy Slim. Both very well known and quite talented.
Following those discoveries, I have more recently found that the following three artists are excellent for fast-paced music, with originality, substance and less "repetitive" music: Dirty Vegas, Crystal Method and Chemical Brothers.
I encourage many of you who don't typically like "electronic-style" music to give these artists a try... assuming you also fall into the "go faster, GO FASTER" category frequently when driving.
Even though I like a very wide range of music types (except country... blech
), I find myself driving to stuff from those artists more and more often.

most of the stuff I like a lot of people haven't heard of so I'll stick to the better known.
My top albums that make it on most of my road trips;
Meatloaf-Bat out of hell
Talking heads-don't remember the title but it has psycho killer and take me to the river on it
Violent Femmes-can't remember album title either but it has Blister in the sun on it.
Cake-prolonging the magic
Bands that make it on my compilations for driving:
Tricky,Massive attack,Morcheeba,Portishead,Baxter(kinda drum&bass but in a good way)
Morphine(if you don't know, go find out you won't be let down)
A3(they did the sopranos theme song, old gospel funk stuff)
Johnny Cash
The Faint(80's style poppy techno with catchy vocals)
I completely agree about the Top Gun soundtrack, nothing makes you want to stick your head out of the window at 100mph and shout "I'm the king of the world!" more than that does

It seems there is a direct connection between my ear and right foot whenever I hear Whipping Post by the Allman Brothers Band. Same goes for Skynyrd's Freebird. Another good motoring tune is Zeppelin's Ramble On.
One of the all time classic driving tunes:
Radar Love, Golden Earring.
"I been drivin' all night, my hands wet on the wheel. . ."
But be careful, you'll end up doing 130 before you know it, and I can't be responsible for the tickets. . .
