Hey everyone, Denver native here transplanted to San Diego some years ago...
Looking to find someone willing to bring some Collaci's spaghetti to MITM for my family because NOBODY makes da pasketti like they do. Anyone willing to help? I'll gladly pay for it, either reimburse or call the order in... but I do need to share that with the family and friends I'm bringing with me

yep Collaci's in Louisville... the Blue Parrot was also one of thier restraunts. I'll have to contact some family in Arvada and find out if the one in Louisville is still there or if they relocated to Denver... :(

Hi,
I live in Louisville. Collacci's sold to Pasquinni's (a family owned Denver rest.) a few years back. It still has the cool old sign but it says Pasquinni's. Unfortunately they do not use the the Collacci's recipes. Actually there are not any Italians cooking there. Recently one hispanic cook pulled a knive on other hispanic kitchen workers. The manager called the police and threatened to call ICE as well since the cook was on work release and needed to keep a job in order not to be deported. Unfortunately the rest of the kitchen staff were apparently illegal aliens (the management didn't know - wink, wink). They all bolted and haven't been seen since. I'd avoid the place.
The Blue Parrot is still around and still operated by the original family. The families of Collacci's and Blue Parrot are related, but estranged. Something about an affair between a brother and another brother's wife leading to a divorce and the marriage to the other brother - decades ago. I'm really vague on the details.
In other news from Lake Wobegon (Louisville) (isn't it cool to live in a small town) the Blue Parrot recently made national news when it was the subject of a complaint by a New Jersey man of Italian descent. He was offend that the Blue Parrot had a Wop Burger on it's menu. The family however defended its Wop Burger by stating that the founder, the current owner's great grandfather, named the burger and put it on the menu 88 years ago. She also points out that for years the Italian market, also on Main Street, was owned by 'Joe the Wop' who wished to be called 'Joe the Wop'. Apparently in Louisville Wop was a term of endearment within the Italian community.
The story has a happy ending. The Wop Burger lives, the Blue Parrot recieved lots of publicity and increased sales, and the New Jersey man finished his vacation and returned home where hopefully he can live unoffended by the name of a sauce covered sausage patty on a bun on a menu in Colorado. Score one for Political UNcorrectness!
But I digress. Once I determine that we can make it to Minis in The Mountains I'd be happy to bring you up some Blue Parrot spagetti. At this point I'm still working things out. The Blue Parrot also commercially produces sauce in jars. You can buy it in grocery stores around here and I've even seen it at the Costco in neighboring Superior. Perhaps the grocery stores in the mountains carry it as well.
I'll let you know if I don't see someone else step up.

Thanks a bunch for the information... I think the last time I ate at Collacci's was during the fuedal time between brothers. I'm really sad to hear that they sold off the original... that was a long time favorite of my family's before relocating to CA and have found nothing like it since.

You might have read
on the other thread about SDMikes soap in progress, I have him and Tig covered for bringing up a few orders of BP Spagetti. So unless something earthskaking happens, the San Diego MITMers are covered for a late lunch, early dinner or breakfast.
