F55/F56 Coilovers...

It's a tough call with 215 series tires since they're wider than the wheels are. 12mm should be good I would think. You'll need longer bolts (might be a good time to convert to studs).
I'm not married to the 215's....should I stick with the 205's? There just seems to be more tire options in the 215 size (I need All Season High Performance).

I don't mean that they're not good, they're just wider than the wheel so it's a bit tougher to guess what size spacer you should use.
I'd say buy a pair (just 2) of 12mm spacers to try. If they look awesome in the front, then I'd get a set of 12-15 spacers for the rear. If the 12mm is too much for the front, move them to the rear and get something in the 8-10 range for the front. I'm pretty sure the BC coilovers come with a 5mm spacer too, so you could try that out.
Either that or wait it out and get some 3mm thick washers off amazon to test fit them. You can stack them to get a better idea of what size spacer you'll need. Just don't drive on them like that.

I need to wait for the final specs on the fJCW wheels. I was going off the JCW wheels that are an option with the JCW Aero Kit. Word on the street (straight from MINI USA) is "Although the Track Spoke and the Cup Spoke Wheels are offered on F56 Copper and Cooper S if you order the JCW Exterior Package (7KN), the actual wheels you'd get are different from those on the fJCW. The wheels on this car are differently shaped inside to accommodate the larger brake calipers."
I don't know if that will affect the offset/one way or the other?

The spokes bend outward to accommodate the brake caliper. Why MINI didn't just go wider is anyones guess, instead they have also fitted those poorly designed arch extensions which look like a Friday afternoon rush job!
I was able to confirm direct with KW in Germany that the ST kit available from tuner shop is an error. No ST kits are available at this time.
Later, tunershop confirmed the same thing and thank me for pointing this out to them.
I've asked KW if ST kits are being developed and am awaiting a response.
