offset question:

This is my first post on this forum, so please be nice to me...
We just bought my wife a 2010 S convertible and the only mod I'm "allowed" to do is tires/wheels. (I usually go overboard on my vehicle mods)
I'm looking at doing those new Sparco Assetto wheels (black) in 17x7 with a 37 mm offset. Tires will be 215x45 because I don't want a shorter overall tire height. The question is simple......will this combo fit an OEM height car w/o rubbing?

It will fit but the wheel and tire will be slightly farther sticking out vs stock which is more aggressive but fine. No rubbing using stock suspension but if you do lower your MINI later you may rub when loaded in the back and if you choose 215/45-17 which is a taller than stock tire.

Your other tire option is the stock 205/45-17 which is fine with this wheel.
This is stock height.

Using stock suspension the 215/45-17 will work however the selection of tires will vary with these two sizes. Any idea which tires you want to use?

Why not put the stock runflats on the new wheels and use them up? Use a shop that can handle runflats and be very careful with the TPMS so you don't get them damaged.

On an offset question, Does anyone know the Highest Backspace for a R56? Is it the same as a R50?

Depends in the diameter of the wheel. 16" is around 6"

The runflats are 16 and the new wheels will be 17.
The 195s are 24.4 tall
The 205s are 24.2 tall
The 215s are 24.6 tall.

I'm looking at Conti DWS as they are #1 rated at Tirerack for Ultra Perf A/S tires.
