Sporadically, my mini will not start. The battery is brand new, and I've already replaced to starter to try and fix the problem. When I turn the key I either get a couple clicks w/ no crank or absolutely nothing!! Any ideas???

Could be the ignition switch. They can eventually wear out and start to fail.
First thought of the clutch pedal magnetic switch, but that shouldn't even give you a couple clicks if it's not working.
Also definitely double check the battery terminal connections.
The immobilizer module is an unlikely possibility.

+1 on double checking battery terminal connections. Also, since you replaced the starter, recheck those lines to make sure you don't have a lose connection.

^^^That's not a bad idea also. Even though it's a new battery it could still have a bad cell.

The car has an aux voltage gauge and it reads 12 volts so it's definitely not the batter and all the light and everything come on like it's going to start and then turn the key and maybe get a click or 2. Ignition switch seems like a likely culprit but I don't really want to just throw parts at it. Is there a way to bypass the magnetic clutch switch to see if that's the problem?

heres a few observations, and guesses

starter is not getting enough amps to work,
switch is switching.
so
the system supplying power to the starter is losing it somewhere.
could be
bad ,loose ,corroded grounds ,
bad connections on your 12 volt battery,
bad battery won't pull amps but shows 12V,
starter hot side wire loose, damaged
starter relay funked up
motor locking up , flooding

The buddy and I are off to his shop to see what we can find. Hopefully the car won't start so we have a problem to try and fix rather than a not problem to try and find!!!

Turns out it was all as simple as the grounding strap on the passenger side upper motor mount owing undone. I guess I spent $300 on a new starter for nothing!

Good deal. At least you shouldn't have to worrry about a new starter for awhile. Glad it all turned out for you.
