Who makes sway bars?

Mine takes a little too much body roll for my taste.

If I was getting the sport suspension, would I need this? Or rather would I want this?

The '07 can use '02-'06 rear sway bars. They fit. I don't think I've seen a vendor yet that has a unique one-the ones I've talked to say the others work. (and it's what I have on my car)

If you have a sport suspension, it has a little beefier bar than base, but if you want more, you can always get a thicker bar. It's a personal preference thing if you aren't tracking. When I put mine on, it felt better to me when playing a little.

You'd still need one but wouldn't want one because you just spent more money for something not really as good...

I'd wait a little while and see what Dinan and M7 do.
Or call Way at Way Motor Works and see what he likes. His tastes are for performance first.

That sounds like a nice beefy bar; did you need control arms? And did you get greasable bushings?

Didn't need control arms. They come with greasable bushings.

The 25.5mm hollow is equivalent to something like a 20 or 21mm solid bar. I have it on the middle setting and it's not too much.

Just from memory, I believe the R56 S has a 17mm rear bar standard, and 18mm with Sport suspension. The sport suspension still has a very understeer bias. We just installed an H&R 19mm adjustable bar on our car, set it to the stiffer of its three settings, and the car is MUCH more neutral. Excellent for daily driving. For autocrossing, you'd probably want still more rear roll stiffness and or less up front to get the car to pitch around on throttle transitions.
