Avoid the "you think I can't drive?!" problem by having both of you go.

Find your local BMWCCA chapter and go to one of their ADSS (Advanced Drivers Skill School) / Car Control Clinic things - a parking lot based driving skill school that is great fun and also very useful training.

Start here: http://www.bmwcca.org/

For LA - http://www.bmwclubla.org/

While I have no personal experience, this looks like it might be a good option that I'm considering down the road--and it's SoCal based:

There are alot of driving schools (racing schools) across the country but not all offer a "high performance" curriculum as they concentrate on "competition" driving skills.

One that does offer a "High Performance" curriculum is the Bob Bondurant School of High Performance Driving.

Here is an excerpt off their website:
High Performance Driving class combines advanced street driving skills with techniques refined through years on the racetrack. Day three offers more track time and students wear race suits and helmets.
Features: Autocross, slalom, accident avoidance, track time on the 1.6 mile Bondurant Road Course

The Bondurant School is located at the following:
Bondurant Racing School
20000 S Maricopa Rd Gate 3
Chandler, Arizona
1-800-842-RACE

Their website can be accessed at: http://www.Bondurant.com

Another school that offers "performance" driving classes is the Skip Barber Racing School. The Skip Barber school has the unique feature of being held at major race tracks across the country (hopefully one near you - Mazda Raceway Laguna Seca).

Here is an excerpt off their website:
High-performance driving encompasses everything from "defensive driving" to learning -- and practicing -- the same car control skills that professional drivers possess. Whether you drive a 500hp sports car or a 200hp minivan, at the Driving School you will have the time of your life -- and learn the skills that can save it.

Their website can be accessed at: http://www.skipbarber.com

Either way you choose, you will not be dissapointed as both have excellent curriculums and instructors!

Best of luck to you! Your wife is a lucky lady!

Some of the members of SCMM (SoCal MINI Maniacs) are looking into taking the VARA (Vintage Auto Racing Association) Driver skills training at Buttonwillow in early February. Several of our members are also Vintage Racing Enthusiasts, and they strongly recommend the VARA training. Hopefully more details will be forthcoming soon, but I believe that participants operate their own vehicles on the track, and that classroom instruction, as well as in-car instruction are part of the curriculum.
