does water temp come with the probe? boost with tubing?

it does come with the sender but but not the radiator hose adapter. The boost has a electric sender that the boost/vacuum tube would attach to.

your best bet is to use something like this (it accepts both 60mm and 52mm gauges; 52mm will require rubber adapter):
They (Alta) also has a single pods that can be attached to one of the screws behind tachometer. I will snap couple of pictures of my setup when I get home.
