Gp3 #1001

Just picked up a GP3 #1001, 5300mi, looks really clean, no signs of abuse i.e. cookie crumbs, pet fur or even track use. tires appear original/dates seem to line up, all rotors nice and smooth.
Some questions for you folks:
I noticed a ton of rocks in the fender flares, what do you use to get those out?
Have you used the stock (Hankook Ventus S1 EVO Z) in sub 40 temps without incurring any damage?
If no what tires work in this size for cold use (no rain or snow). Not much on tirerack.
I just got the car so anything you can think of to mention feel free to.

I read another post, that the flares are flexible, you just pull on then slightly, rock fall out.
