A couple of questions:
Do you have to use a PC with Prima products or can they be applied by hand?
With Zaino you have to mix a catalyst to speed up the dry time ... is it the same with Prima?

The only difference between application variations is with a few products...
Amigo's super-fine abrasive is non-existent when applied by hand (but for most people that's not why they're using Amigo anyway, so for most it's a moot point)
The abrasives (Cut, Swirl & Finish) will be act more aggressively when applied by PC than when applied by hand.
Prima Epic, the synthetic wax can be applied either way with equal results, as can any of the others.
There is no need for a catalyst with any of the Prima products.

This is true of any polymer wax, and weather you use ZFX, or Polycharcher, they will even work with other brands like prima.
But in no case do you NEED to use them.
I only use it when I want the first zaino layer to cure quickly so I can apply a second.
I understand about the use of ZFX (especially after waiting 2-hours for Z2 to dry).
I guess I was hoping for Prima Epic to have the same drying time as Z2 w/ ZFX ... or will I be watching reruns before I can buff my car off?

I do have another question about Hydro...since most users spray it on after rinsing their cars, is it same on glass, plastic trims, etc? Or should I try my best to spray onto the panels only? (I know its a dumb question...sorry).

You don't have to worry about getting it on the glass nor the plastic trims. It's an amazing product.

I use it when the car is wet - spray it all over and then use a waffle-weave microfiber drying towel to dry.
When the car is clean but just looks like the shine could use a little boost, I use it VERY sparingly and buff with a Monster Fluffy.

Some folks QD with Hydro - but I use Slick. Some folks apply Hydro while the car is "totally" wet after wash, then dry.
It usually takes me one or two to get through a wash. Then I wash them, along with whatever other MFs I used, and put them back in the cabinet all folded and ready for the next wash! 
So far I've had all my DP MFs since October/Novemberish and they're all holding up just fine - some are still like new!

window cleaner.
However, in temps over 60 degrees, the typical drying time is about 35-45 minutes. I always like to wait a full hour just to make sure.
Many of our customers wait just 35 minutes and still have great results. "Not waiting long enough" usually results in slightly less longterm durability but doesn't hurt anything in the shortrun at all.
At lower temps (and high humidity), it can take a bit longer but not necessarily that much.
When in doubt, you can do the swipe test to see if it's ready to wipe off yet.

If you take Epic off too early, it is harder to buff out also.
