The MINI is my first really nice car and I want to keep it nice. I plan on trying to wash it regularly during nicer weather and rinsing junk off it in the not so nice cold weather. My main question though is how often should I wax it? Every time I wash it would be a bit much I think...

this is kind-of a loaded question. the answer is dependant on the type of wax you use. Zaino crowd will give you a whole novel on the schedule and methods; Caranuba crowd will say whenever water stops beading, Silicone crowd will say every month, and the show glaze crowd will say all-the-freakin-time.

I'm a caranuba-believer, it's an easy visual gauge, plus offers real-world physical protection with good optics and gloss (prefer White caranuba).

Good luck (you'll need it!)
Cheers,
Ryan

Only had mine around 6/7 months, but have put a nice wax job on before winter weather came hard and will do the same after. After that I'll do my washes with a type of liquid that is a cleaner / polish type, but a good wax before next winter starts.

I have been stripping my wax down and rewaxing almost every other week since I got my car. Meguiars gold class. I just love that really wet look. I would recomend at least 2 coats with the meguiars too.
