The blue and red does look a bit off. The stripes can be removed, you just might need to do a bit of paint correction if there is any fading around them. 140k miles isn’t a lot for these cars, as long as it’s been cared for. The auto-stop “feature” is the worst thing for internal combustion engines. If that is what you experienced, thankfully it can be turned off.

I found several You Tube videos on 2019 Countryman features and one said the Auto-Stop "feature" remains off after being turned off, so it may have already been turned off when I drove it. I did not notice if the switch had a light on or off on the tip of it. I had previously seen a complaint that the "feature" would reset to ON and had to be turned off each time the engine was started, but that may have been for a previous year.
I did check the tire pressure display, (because I often use that feature on our 2010 Odyssey), and that showed green tires if they were OK and then did list the pressure of each tire beside it; a handy option to have. Being a Countryman Newby, there were many options I did not know to test at the time I drove it. The BMW VIN decoder says it has "Cruise control with brake function" but apparently not adaptive cruise control as it lacks the distance buttons on the steering wheel. I need to study more videos on the features before I drive it again, but first I have to persuade my wife that it is OK to drive a blue and red JCW "Clown Car".
As an aside, the auto-stop "feature" may be bad, but I believe Honda's Variable Cylinder Management that disables the valves on three cylinders in ECO mode so it runs on just the three front cylinders is worse. There is a way around that by adding resistance to the coolant temperature sensor circuit, but VCM has been responsible for plug and ring fouling on many Odysseys and other models with this ill advised system.

On my 2018 JCW (manual) the auto start can be turned off (lights up) and it stays off for good…remembers when shut off. What you felt was the ‘hill assist’, sets the rear parking brake I believe.
Mirror caps are super easy fix taking mere minutes, either oem or cheaper covers with 3M tape.
Wrap or paint the roof white, remove the stripes and replace the hood stripes with white, same size or a bit bigger (such as custom from sign shop) so no issues with paint fade. Redo the door stripes if needed in white, or leave off if paint isn’t faded. That’s what I’d do…I think you will be very happy with JCW. My thoughts…

Thanks for the suggestions. Repainting the roof would be the most expensive part and I have yet to find a white vinyl roof cover from the usual suppliers or Amazon, eBay, or Etsy. I showed her what it would look like with white stripes and mirror caps (thanks ChatGPT) and thought red. white, and blue might be acceptable, but she still doesn't want a red roof or the red JCW grill trim. (I didn't tell her it also has red Brembo calipers.) I am about to give up and just stick with the Odysseys until a blue and white one magically appears locally in my budget range.. Sigh.

For the roof could contact a business which does paint protection and vehicle wraps. I don’t think it would be too expensive to wrap the roof in white, but I’m definitely not an expert.

Island Blue with Silver Roof, stripes and mirror caps is the way to go, here's my wife's 2023 MCS.

NICE! But it seems I do not have a choice if I want to stay married. I did get a phone estimate of $350 to wrap the roof in white. I probably need to take it there to be sure. Maybe tomorrow? I just read that 2019 was the first year Mini let folks choose Chili Red on models other than JCWs. Before that it was exclusive to JCWs. Guess the first owner of this one wanted to make sure folks knew it was a JCW.

ChatGPT added the white roof.

Could question the roof wrap dealer about the stripes when there, probably would have a solution.
Stripes also available on Amazon, eBay, etc at reasonable price if you want to tackle yourself, or give to professional.

I took a 2019 Countryman ALL4 JCW to a car wrap company to see if they could wrap its red roof in white to satisfy my wife's requirement for a blue and white Countryman and not its current blue and red color combo, and the wrap expert said it would be cost prohibitive because his folks did not like to remove headliners, especially those with side curtain air bags, and that would be required to remove the roof rails. He also said the bonnet stripes had age cracks that would make them difficult to remove and expensive if he did it. I posted in another thread here to ask if the roof rails could be removed from the outside and the answer was no, although one response said he had his R60's roof wrapped without removing the rails. I was considering checking on roof painting costs (the wrap expert said wrap would only last a few years if exposed to sun), but in the mean time the JCW was sold to someone who apparently could live with the Chili Red and Island Blue (which I also could have if I was buying it for myself).
This experience has left me more educated on F60s and also raised the bar in my Countryman search to a JCW with head up display and active cruise control among the desired goodies. Like hoping for a unicorn that fits my mule budget.

I'm surprised the shop wasn't willing to work around the rails. I would try a couple other shops before giving up.

I know you haven't found a car yet, but I wouldn't just stop at one shop and call it a day.
