I was in the same boat as you are. I understood that once you are able to turn the car seat to face frontward, it becomes much easier. So what we decided to do was to use our SUV for the first year or so then the MINI will step in.
It passed the test. Now I am trying to figure out which one to get; are there major differences between a 2003 & 2005. Anything I should look out for in a used MCS? Thanks.

If you're going to buy used, go for a 2006 since all the kinks have been worked out. (JMHO)
I am bummed to hear that. I have found some great 05's and excellent prices. Anything I should look out for?
Pete-
Try the first generation MINI (R53) forums here and ask that same specific question. Someone will be able to guide you as to what to look for and what to stay away from....

If you can find a clean low mileage 05, you should be good. From what I have read and what people tell me the 05/06 model years are great, MC or MCS if you want the supercharger.
You will get lots of fine driving miles out of a good 05.
Good luck and let us know what you buy or if you decide to go with a new 07.
