You're confusing curb weight (how much the car weighs-2678 for an S) with gross vehicle weight rating (GVWR) (how much the car w/occupants and luggage can weigh -3494 for an S.)
See page 134 of your owners manual for details.

Get on your bathroom scale and record the reading. Go out to garage, pick up MINI and get back on scale. Record the reading. Subtract first reading from second reading.

Seriously though you're probably looking at Gross Vehicle Weight which is your fully loaded vehicle.

Let's see my bathroom scale only went up to 300 lbs. When I did what you suggested this is how I calculated my results. I weigh 202 lbs. When I picked up my MCS (full tank of gas - only 19 miles since the last fill up) the needle spun around 9 times before landing on 285 lbs. So that would be 2700 + 285 - 202 = 2783 lbs. Oh, and I did get a small hernia from all that lifting, so I wouldn't try this at home kiddies.

Drive to your friendly local landfill or transfer station and ask them to weigh your car! Smile nicely and they may not even charge you for it

The company I work for operates hundreds of landfills/transfer stations and apparently the scale operators get a lot of boat owners wanting to weight their boats etc.

A moving company may have a scale, and be a bit cleaner than a landfill.
