wheel fitment

I found a good deal on some OZs on cl. They are 17x7 with a 37 offset. How are these going to fit?

While they will fit they will stick out 14mm more than stock.

If you use stock tires and stock suspension it will work.

You can use more negative rear camber to tuck the top edge of the rear tires inward a little but do not be excessive in rear camber since that would increase tendency for oversteer.

I had 17x7 et38 wheels with 215/40-17 tires using H&R springs (almost an inch drop) on my 2003 MCS (R53). I had slight rubbing in the rear that required a little trimming of the plastic wheel arch and wheel well liner. Also with the lowering that added negative camber which provides a little more room. Thus, it will be close but should fit depending on the tire size and how much your car is lowered. It also depends on what year/model MINI you have.
