any of the above,or, with the burn & dodge tool there is also a sponge tool. It is the afore mentioned desaturate brush. Make sure to use it at 100% opacity.

Use a brush and draw in a channel if you want control and prescision & get a tablet!

You have to lock the layer of the original so changes or additions you make do not affect it.
