I made one from the GP foam rear seat replacement, here is a Google translation from my Dutch website.
The GP foam needs some cutting because it is too wide to fit, and I needed to cut some more because I had to make some room for the Schroth harnass.

Here is my "Rear Seat Delete." I have Tuscan Beige Sprt Seats and two Long Nosed Lovelies (Greyhounds) who are the only rear passengers. The front facing trim board is oak to match the english Oak. The covering is commercial grade genuine Portugese Naugahyde. It is double hinged so that I have storage under both front and rear portions
Robin's looks very nice in person. I drove around with the back seat out for a few days while fiddling with speakers and such, and after a moment of thought, the greatly increased noise level wasn't surprising!
Any hints on where to source material (cloth? carpet?) for covering such projects?

I got the Black Box Carpet from Crutchfield. This is what covers the lower front of the cabinet. It was about $10 per yard. It blends well with the MINI carpet.
I think that the floor carpet came from Home Despot, but I'm not sure. Any carpet place should have a good black carpet.
The cabinet and floor was made of Finnish Birch from Southern Lumber. They also supplied the Ziricote hardwood for the trim, and the MDF for the speaker box. The finish on the front of the cabinet was metalic black Rustolium over primer. On the back I put a layer of splatter paint to create the texture and oversprayed it with metalic black.
Most of the hardware came from http://www.mcmaster.com
I used a lot of T-nuts and machine screws so the cabinet, and floor can be removed. The car can be put back pretty much to stock, if desired.

MINI is concerned with keeping production costs down. It would surprise me if they designed the rear belts to be sewn together after feeding them through the C pillar, but I guess it is possible.
Not on the rear speaker leads. They ain't got no bass. 
I'd have to add an amp and run wires up from the front to power them. However, at this point it is seeming that adding a sub would be a good idea. It doesn't look like there is an easy way to restore bass to the 6x9's. What were the MINI auido engineers thinking??
