Passat,
These are +37mm offset 17x7 OZ Superlegerras with 215/40-17s and Bilstein PSS9s and a 10mm spacer on front (makes a +27mm front offset):

And there's no rubbing.
I think your wheels would fit with some trimming, depending on your suspension setup.

Just by looking at the photo you can see the wheel stick out past the fender. Now I know you have more then 2" of travel at the least. How can this be.
This is a very hard question to answer as every Mini will react differently to wheel size. Also, as some have sorta pointed out, it's more the tire size then wheel size.
Expect to have to trim when you oversize either the wheel or tire. You may luck out, but odds are at some point you will rub.
I remember talking with a Mini owner at the track. He was very proud of his new 225-45-17s and exclaimed that they NEVER rub. As he showed me how great they look I pointed out to him the rub mark on one of the rear wheels. He was a bit embarrassed ...
This is why you have to be careful here asking what the biggest you can fit is. I can tell you that I use 235-40-15 and never rub myself, but that's after a whole bunch of modding to make them fit.
I couldn't believe it either. I trimmed a TINY bit off the front - I'm talking a few mm. I haven't heard or seen any rubbing.
Of course, it's only been on local mountain roads, and not the track yet, but it has been in some turns where the suspension has been as compressed as it's going to get.
I'll look some more, but I've heard and seen NO rubbing.
I'll also take some close-up photos later.

Storm,
17x7 +27
17x8 +35 = 5mm more of an extension outwards
I used an wheel offset calculator to compute the difference..
I am not afraid of a little sticking out and I plan on going with a smaller tire like a 205/45/17.
Also, trying to decide if I should go 17x7 front and 17x8 back...
Car will be at and stay at stock height for extra room !!

You may still have some rubbing, depending on the characteristics of the tire, etc. The stock suspension will help, and adding some camber plates with negative front camber will help with tucking the tires in on the front.
Yeah, I will have to see what the wheels look like in a few weeks to decide if they are cool enough to be worth all this extra work !!
They are going to feature a stainless steel chrome lip so, a 8" wide wheel should have a fairly large lip.. But if the 7" wheel has a nice lip to I will proably just wimp out and go with the safe route..
BTW, OZ's look great and post some more pictures, so I can get an idea of how fair my wheels may stick out..
I was thinking BFG KDW2.... 205/45/17

OK, onasled, you were right - I DO have a little rubbing. It's interesting that I:
1.) Couldn't hear any rubbing, when I have heard rubbing in other MINIs.
2.) Have no rub marks on my tires or wheels.
Anyway, I am having camber plates put on next week, so that will reduce or eliminate the rubbing. If that doesn't fix the problem, I will go to 5mm spacers.
I had absolutely no rubbing with the stock suspension and this tire/wheel/spacer setup. If you're not worried about a little trimming or rubbing, then go with whatever setup you like (within reason). If you want absolutely no rubbing and don't want to trim, then be more careful.

yes, there will be problems, especially in the back

that is what i thought, i would go 16x7,5 or 16x8 all around. If you go to a wider rim, tire choice and size becomes very important.

In the rear I had a slight rub on bumps when autocrossing but I was, and still am, very low, about 2". I fixed this by raising the the car 1/4" and going up on the spring rate about 50lbs. I could have reduced my rear track, with my H-Sport control arms, and fixed it that way but have been thinking about some 225/45/16's and held off on that till I got the tires so I could fit it to the space. My springs are stiffer than either of those you mention so this helps me. Another problem you will have is rear wheel lip to trailing arm clearance mine clear by apx. 3mm, so a 16x9 would need apx. another 1/2" of offset, apx. +30. Plus, see the thiner wheel issue above. This, +30, will push your tires way out so you would need some very small diameter tires or a track adjustment or both to get a 16x9 to fit or the tires will rub the wheel archs.
