I have a spare set of wheels for my 08 R56. I plan to mount a set of tires for track use. What is the downside if I do not install TPMS sensors? Will the tire pressure warning light be on constantly? If that's the only thing I can live with that.
Yup. at startup youll get a little 'ding', like when the cold weather warning comes up and then the light just stays.

I do not think you need to use TPMS on the track rim/tire combo. You should be monitoring the tire pressures before and after each session anyway. I would be a little too busy to notice the light while driving on the track.
Trackside tech inspection will pass the car with the TPMS light on.
