Low oil light at idle when at operating temp

Hey all I have a 2010 R56 with the n14 and well long story but I picked this car up because the previous owner bent all the valves and didn't want to deal with it (guy is an idiot and didn't know what he was doing,I mean the crank bolt wasn't even properly on and timing was off so badly!) so I bought it from him, fast forward a couple of months and I'm putting it all back together everything is good with little hiccups here and there, and went out for my first test drive and about 10 minutes in get the low oil light at a stop, so I immediately turn around and head back to my shop but no leaks of any kind. anyways I initially thought I didn't tighten something and my car had like a quart of oil in it, but underneath was dry and car had plenty of oil. then the next day I dropped the oil and its watery as hell! so I thought eh maybe I can run some oil changes through it and maybe it will get better but nope finally got around to block testing it and well failed the block test :( I thought seeing as how the car never technically ran I could re-use the head-gasket but obviously the guy had some crappy eBay head-gasket. so next week goes by and I redid my head and took my car out for a spin same issue oil light at idle when at operating temperature, here are some things to rule out, I did the oil filter housing but I don't know if folding the gasket would get coolant into the oil may be worth re-doing and seeing? I do use non-OEM filters but a lot of minis I work on I also use non-OEM filters and their cars never have that light on so might be worth a shot too? I dropped the oil today after redoing my head-gasket and well looked clean not really watery and was able to block test it and passed, I noticed when I thought maybe the pickup was clogged that the oil pump on that was on the car was a SHW which is not OEM and look brand spankin' new so I have no idea why he replaced that oil pump those things will outlive the motor, I used to work at mini and still keep in touch with my coworkers, both have them have replaced one oil pump due to literal timing pieces flying through the pick up or the oil pan hitting the pump cause a car hit a curb so I thought what the hell I should just throw a pump at it and see if it works but it didn't mine was even a OEM no cheap knock off so I was pretty upset about that, I haven't been able to see oil pressure due to not having a adapter for the oil pressure sensor but I did switch out sensor on my bosses mini and didn't do a thing which made me think it's the pump so yeah bummer I really don't want to do bearings and I have a fear its going to be that and that would be really unfortunate if it was so ill try and keep updates to see if a new OEM mini filter works or if re doing the oil filter housing works.
