Sluggish acceleration from a stop

Hey all,

I'm new to the forum here. I just picked up a non running 70k mile 2011 factory JCW Coupe for very cheap. The previous owner said the car wouldn't start after being parked in the garage for three days. He took it to the local MINI dealership and they told him there was a 90% loss in compression and it "wasn't rebuildable". Lucky for me, everything looked good when I tore it apart. No bent valves, everything was clean, etc. Turns out the problem was caused by a huge amount of carbon in the intake valves - so much so that the valves wouldn't fully close. I've got all the walnut blasting equipment from doing the same work on a BMW N54, so it was a simple fix. I took the cylinder head to a machine shop afterwards and everything looked good, but the technician said the valve guides were a little worn and he would recommend replacing them. He ended up replacing the guides, stem seals, and grinding the valves.

I did some reading on the N14 and did a lot of preventative maintenance while I was in there. Here's a list of what was done/replaced

All new timing chain, tensioner, guides, and sprockets
new vacuum pump
new serpentine belt
new front crankshaft seal
new air, cabin, and oil filters
new valve cover gasket
new thermostat
new oil filter housing gaskets

The car is now on the road and driving well except for one problem. When you're out a stop light, you have to give the car a lot of gas when you're getting started, otherwise it will get super sluggish. It will drop down to 500 RPM and will just lurch forward super slowly. When it hits this low, there's no way to pull out of it. Giving it more gas won't do anything and pressing the clutch to "reset" the engine won't work either. Sometimes the car will die, and sometimes it will pull out of the funk after about 5-10 seconds and will be fine. The car drives fantastic at all other speeds, but has a lot of trouble getting started from idle sometimes. It's not throwing any codes, and I've attempted to do some research on the issue, but I'm not finding much. Any suggestions for things to check would be appreciated.

Only a couple more things to sort out, like the airbag light for the seat occupancy sensor and a couple weird rear tail lamp/ fog lamps malfunctions and then this car will be running like a dream!
