Temperature goes up and down while driving

Temperature goes up and down while driving

Recently changed all the coolant hoses (including plastic hose that runs behind the engine), water pump, thermostat, top metal coolant hose for the turbo (because it was cracked at plastic part) and temperature sensors in my 2012 Countryman. Only hoses I didn’t change were the hoses to the heater core and the hoses on the aux pump.

Did all this because after the turbo hose cracked and I replaced it I noticed a wide range of temperature flux while driving. Car would heat slowly up to 116C or 117C and then rapidly cool to 204C and repeat. About a minute to heat up and 10 to 15 seconds to cool down. Also did it because I had the engine down to replace the clutch.

Drained all fluid via gravity, connected everything back up, but vacuum on reservoir, system held vacuum, charged via vacuum release with blue coolant, burped. Check to see if any codes being thrown and no codes. After well over 100 miles coolant level is right were I topped it off, at max fill line.

Car still runs between 104C and 116C. Fans kick in at 108C for min and 112C for max.

When I run the car in sports mode temperature ranges from 100C to 106C and only varies by a couple of degrees. Meaning it runs 102C to 105C or 103C to 106C and usually stays pretty constant on one temperature.

Any idea on what would be causing the high temp of 116C, rapid cool down, and then reheating?
