If your primary concern is gas mileage, there are more economical cars out there for you to choose from. I drive with the sport mode engaged all the time because I find the car is more fun that way. If it has affected my gas mileage, I don't care (or I would have purchased a Prius instead).

I'm a young engineer and have yet to see some things but eventually I hope to be as intelligent as some of the more experienced engineers I work with.

Anyways, while on all technical points you are absolutely right, where I see a difference when I drive without sport mode on... (have tried it for a few tanks of gas to work out averages), but 90% of the time have sport on.

The difference with it off is when you're cruising on the highway, the smaller inputs in your foot (from bumps in the road, twitchy leg etc) will not affect the throttle input as much. Thus, you have a softer/more forgiving 'cruise' throttle response, which can help you maintain speed on a flat surface much easier, or, if you need to only give a little gas to get over a small hill, you'd have to really be gentle in sport mode to give it minimal gas to get over the hill, whereas you have more of a leeway without sport on to give it the appropriate amount of throttle.

I noticed this by watching my vacuum pressure fluctuations while cruising at a steady speed on the highway. I'd get much closer to boost everytime I tapped the gas w/ sport on vs not. Granted, I hate the response without sport button on... both throttle and steering.

Thats about it, otherwise, its all the same. Its like when people say they turn off sport button and don't have drone anymore... lol. Give it more throttle, and its the same exact effect.

With the sport button off I saw an average of 29mpg over 3 tanks, vs anywhere from 24-27 with sport on (which is how i normally drive)... notice my lead foot either way =x

If I'm cruising on the highway, I've got the cruise control on anyway, so my throttle inputs are moot.
