R50/53 Head Gasket
LOTS of variables in that question!
I'm a dealer technician, so I'm guessing "the book" says the job would pay 12 hours or so. I haven't done an R53 head, but knowing myself, I imagine it would take me around 15 hours the first time because I'm meticulous. Some guys probably do it in 6 or 8 hours.
Your skill level and tool availability are the largest factors.

It's easily a weekend job for a first timer, as long as you have all the parts and tools (cam lock tool and such) and do some research up front. (Keeping the timing chain taught)
A descent mechanic or someone who has done it before, can do it in a single day, no problem.

When I swapped the head on my R50, I think it took me about 10 hours total and that was the first time digging into that level of work on that car. An R53 is a bit more involved owing to the supercharger and intake manifold but it was a straightforward job nonetheless.
