SAME QUESTION for Central Ohio - can Midas or one of the chains be trusted with this sort of work? I really want to do this now...
I'm sure some muffler shop can do this-- its so simple. They take a hacksaw and make two cuts and one of the ball (chambers) comes out. Then they measure a piece of pipe, bend it, weld it and you're done. The guy that did mine sprayed it with some anti rust paint just for good measure but it looked like a quality piece of metal. I wouldn't pay more than $80 for it since it takes 20 minutes and requires a $10 part.
The problem for me is I want this bend to be done with a mandrel bender and a lot of the exhaust shops only do press bends.
I'm looking to do the same thing in the Augusta area but want a 2.5" pipe from the cat back to the one-ball, with an electronic cutout added on as well.

Just to make sure I have this right ...I ask the shop to remove the resonator and replace it with a piece of pipe, preferably mandrel bent?

Is there any chance of them screwing it up? Well, I know there is always a chance. I guess what I mean is the process staight forward enough that any shop should be able to get it right?

I don't know if its just me but it seems that every place I've ever lived in, the 1980's and 90's Mustang 5.0 still thrives and they all seem to have some hot -rodded catback muffler system that sets off alarms. If you want a more complex operation, I'd follow any 1988 mustang around for an hour and you'll probably be led to a shop that can do the work for you. Don't forget to smoke the mustang on your way out.
