post-thermostat housing job issue - adapter help?

Hey everyone! We recently replaced the thermostat housing on my girlfriend's '12 Cooper (R56 N16) and something's not right. Right away after we did the job it started funny, like it's choking, revs fluctuating, then settled down. Now the main symptom is the fan runs for a while after turning off the car, and there's a CEL.

Her engine had the old thermostat with just one plug port on the housing and one plug for the temp sensor inside the bleeder screw. We installed the newer OEM thermostat with the adapter. However, there's still one female plug (original to the car) that used to plug into the bleeder screw temp sensor that we don't know where plug into now (see attached pic).

Might that missing plug be our issue? Y'all know what's supposed to happen with that plug? Or perhaps improper bleeding and coolant refill that we did might've caused an air pocket?

Here you go, for certain models when you go from the original thermostat that came from the factory to the new updated thermostat you will need that adapter lead harness, 12517646145

Yes, we installed that adapter lead, plugged the 4-pin end of the adapter into the lower wire of the wiring harness, the green plug end into the top of the new housing and the black end plug into the bottom sensor on the housing. (see pic) Is that correct? Where does the extra wire from the wiring harness go? Thanks!

Thats the sensor on that old elbow part that gets zip tied back if i remember right. The other two complete the circuit.

As for the fan on all the time when you start thats because the coolant is low and you did not bleed the system all the way . Its takes a couple times to bleed.
