I definitely recommend brushing up on the n00b section and this sticky in particular, as it has every nuanced detail possible: How to track your MINI
Between that thread, the Owners Lounge, Ask-MINI, and your salesperson, you'll empower yourself to be fully informed.

Mine was completed on the 10th but didnt show up on the VIN decoder until late on the 11th. So maybe 24 hours after production is complete? Just my guess based on my recent experience.

I would say not that long...
"On this day in 1913, Henry Ford installs the first moving assembly line for the mass production of an entire automobile. His innovation reduced the time it took to build a car from more than 12 hours to two hours and 30 minutes"
With the bodywork being done entirely by robots assembly is likely more like 15 to 20 minutes a car. Everything happens at the same time. Did you the video someone posted on the main section of the F56's being made...very cool.

We will find out the actual time to build a MINI later this year. James May (formerly of Top Gear) is part of a new BBC series called 'Building Cars Live'. The series is constructed of two 90 minute episodes.
You can also refer to the Megafactories program on National Geographic where they followed the construction of a MINI Coupe.
A car will roll off the production line on average every 20 minutes (or less). Keep in mind it takes more time than 20 minutes to build (or assemble) the car. Just think of the logistics of the actual building of a car. Putting an engine together, stamping steel, painting, installing thousands of bolts, screws, fasteners, etc. This is impossible to complete in 20 minutes.
