2010 Mini S - new thermostat temperature rating

I recently had my Mini in for 100K service. Part of this included the Recall N/C service replacement - "thermostat housing & new thermostat" (SI M01 05 17), as I have been told.
ISSUE: As I have had optional factory oil pressure & water temp gauges, been able to monitor standard operating statistics since 2010. Operating water temp always 180 - 190 & oil pressure = 40 psi. Now with the new thermostat, water = 220; oil pressure = 30.
When posing this situation to the shop foreman at Mini dealership, I am getting standard answers, but no real detail nor options to address this, nor any change in the future !!!!.
QUESTIONS:
a) Why is this water temp increase "the new norm" despite being 40 degree higher ???
b) What thermostat is available where temp = 180 - 190 F (85 C) NOT 105 C !.??
c) at this higher temperature, should I use a higher viscosity of oil from 5W - 30 TO 5W 40 ??
