I just got a 2007 Cooper S,
it has the Alta Accessport tuner but does anyone know if they can modify the tunes, or what each map does?
I tried contacting Alta and Cobb but the pages they sent me don't really help.
It's on stage 3 right now, but she's running so rich it hurts 😭
Spark plugs were done 20k ago, but they looked fouled already.

To modify or create a custom tune, you gotta find somebody with the programming device and a license to operate it. Last I heard, a couple years ago, there was only one outfit in the USA that had it, and they're based in or near Salt Lake City.
To find out what each map does, you might try the data log feature on the maps of interest to you. It'll log 20 - 22 different features that can be converted to a spreadsheet.
As for your fouled plugs, are you sure the plugs are the correct ones and gapped correctly? The '07S came with NGK5992 which were discontinued and replaced with NGK95770 --- both gapped at 0.8mm (.032"). With a stage 3 tune, you might try one heat range colder --- NGK1422 gapped at 0.6mm (.024"). You can also monitor / log your AFR to get a better idea of how rich / lean you're running --- there might be other problems.
I'd suggest going with a Manic tune. You can keep the AP as the "base" tune with Manic, and still use the AP for all its other functions, just not mapping. I had an AP custom tune before Manic, and just switching tunes bought me an added 15% HP. I still use the AP for code reading / ECU reset, and monitoring various functions.
