Replacing choke cable - special process?
I was rooting around under the bonnet the other day and noticed that my choke cable's plastic insulation is worn through, exposing the metal cable inside.
In a rare display of forethought, I've decided to replace it BEFORE it actually fails me (stunning, I know - don't get used to it
) and I wonder if the replacement is straightforward, or if I'll need to yank off any unexpected engine parts to gain access to fittings. With my luck, Step 1 of the replacement will be "remove the entire engine from the front sub frame to expose the cable pass-through" or something silly... Hope not.

problem I had with this repair was getting the right choke cable. Mine attaches to the dash with a screw fitting on the back side, but the one I got was sort of a plug into the dash thing, different ****...way different piece.... So I punted.
When you wore thru the plastic on the cable you exposed the metal wrap around the part of the cable that moves (there's what amounts to a flex' tube that the moving cable slides in...just like a bicycle brake cable). That's cosmetic. I released the cable at the carb end and slid some heat shrink tube over the worn spot with a couple of inches on either side. Heated it up and put it back together. Cost of repair, under a buck. Put on a couple of layers if you want, and build security. Or you can change colors....
btw - getting your fingers to the screw on the back of the dash fitting can be fun too....

What I think you want is a metal type wrap/cover to slide over the choke cable?
Given the diameter of the choke cable you MIGHT get away with a braided fuel line. Worst case I'd think would be drilling out the end fittings but no promises. And I think a braided fitting this length might be a wee bit $$
I'm sure you can buy the braided line in bulk, but then you need to worry about end fittings so it doesn't unwrap.
Maybe go to a Harley store and see what fancy wraps they have for brake cables......it's basically the same cable.
