If I'm coming off of I75 (North), how much time do y'all think it would add to my trip if I got off the Interstate early and tried to take the Cherohala Skyway to Robbinsville, fueled up, then North to Fontana?

That is not a ton longer. Just before Sweetwater, TN (Exit 60) head north on 68 to Madisonville and from there to Cherohala. You'll bypass the Dragon this way but it'll be very beautiful.

 

Just before Sweetwater eh? So it's basically one or two exits before I'd get off the Interstate anyway I was just thinking that we were gonna drive the Dragon over the weekend anyway, why not hit the Skyway on the way in

If you're taking a sidetrip on the way down, get off at exit 129 (Lake City TN) and take Highway 116 to St Rt 62 to Coal Hill Road to US 27 to I-40East back to I-75 South to Sweetwater.

Very very "Tail of the Dragon"-like drive. I drove it on the way down to the gap 2 wks ago.

 

Sounds like a nice trip dude, unfortunately I'll be coming up from Alabama so it's a touch out of the way
