Offset is how centered the hub will be in the wheel. The 4X4 guys call it backspacing which is a little simpler of a term to grasp. You want to make sure that your 8" wide wheel, even though wider than the stock wheels, keeps the same amount (or as close to the same amount) of tire behind the face of the hub. If there is too much the tire will hit the suspension or other parts, but too little backspace will make your wheels stick out like a bean waggon. You want your extra wheel with to be in front of the hub, but the wider you go, the more they will stick outside of the fenders. With a 8" wide wheel you would poke the tires out a little bit.
