It does stick out but only a bit. It really depends on which tire you choose.
205/45-17 should be fine, while 215/45-17 would be a bit wider on that 7.5" rim but still not too bad. Keep the stock suspension to avoid rubbing. If you lower then the best you can do on wheel offset is about +42mm to +48mm otherwise it will rub too much. Even +42mm will rub a little under full load or with hard cornering and bumpy surfaces.
225/45-17 would be too wide.

...well I would advise against it and will bet that they will rub for sure. The main reason I advise against it is that you will be limiting any future larger tire choices and forget about ever lowering the car. You really need to stick with a 45 offset on Mini wheels. 35 is just too little.
