The right size tires depends on many things-

What year and model MINI?
How much suspension drop?
What are you using the tires for? Track, street use only, aggressive driving, etc?

If your coilovers are fully adjustable for ride height then that helps but likely you won't be able to use tires much taller than OEM 24.3" without needing to adjust camber to more negative settings (needs front camber plates and rear adjustable lower control arms).

Compared to OEM 16x6.5" et48 wheels the new wheels are 14mm further from the inner suspension and poke out 52mm more.

Max Summer tire
Continental ExtremeContact Sport 340 treadwear
225/50-16 $99.92 each, fits rims 6-8" wide, perfect for 7" rim, 24.9" tire diam.
Tirerack test-

For track use and street driving with better wear-
Extreme Summer tire
Falken Azenis RT615K+ Treadwear 200
215/45-16 $126.46 each, fits wheels 6-8" wide, perfect for 7" rim, 23.6" tire diameter is smaller than OEM so gives better clearance for lowered suspension but still fits 8" wheel.
This tire isn't as friendly for daily driving, it's noisy, not as good in wet, and wears fast. But it looks aggressive. Grip is better once tires are warmed up. You can drive on the street to a track event.

Dunlop Direzza III (new Extreme Summer tire) Treadwear 200
225/45-16 $142.15 each, fits wheels 7-8.5" wide, perfect for 7.5" rim, 23.9" tire diam.
Good size for 8" wide rim and lowered suspension, somewhat noisy but good in dry or wet, costs more, very new. Not as aggressive for track use but solid for street use. Probably the best tire size for 16x8" wheel on a MINI.

For Ultra High Performance All Season tires look at 225/50-16
