Driving differences? between 175/65R15 & 185/65R15

When replacing stock 15" tires on the MINI there is no need to keep the 175/65-15 size as it is limited in tire selection.
You can consider-
185/60-15
185/65-15
195/60-15
All of these sizes fit the stock wheel and work OK for street use.
The 185/65-15 tire size is taller on the sidewall and likely to give a slightly softer ride vs the same tire in 175/65-15.
But the overall performance of the tire will vary greatly with which tire category you select and even with the exact model of tire you choose so do your shopping carefully.
As far as the MINI goes, even with the base Cooper good handling tires will improve street grip and performance. Don't overlook good Ultra High performance all season or summer tires just because you don't think your car is powerful.
All season tires in general can work for the MINI, they give a smoother ride and last longer, they are usable in some cold weather and light snow while summer tires are not meant for any weather under about 40 degrees and definitely not in any snow.
Grand Touring tires give a more supple and compliant ride for commuters and long drives but compromise handling for longer tread life and comfort. They can be very good street tires for daily drivers and handle well in wet or dry.
