just mounted my 185/65-15 Pirelli Winter Carvings onto my Holies. just wondering what the general consensus is around here for the tire pressure. i just set them to 38 psi, is that OK?

Sounds about right to me for your climate. I think many folks increase their pressure by about 3-4 psi in the cold to keep the volume of the cold, dense air in the tire comparable to what it would be if warm.

I'm running my 195-60-15 Hankook iPike snows at 38 psi; perhaps a pound or so less in the rear.

 

I'd think about 34 psi tested am curbside would be better, unless you're testing it in a heated garage.

I think your pressure is set a bit too high. The winter carving is a somewhat stiff snow tire. I'd recommend starting at 32-33 psi. See what it feels like to you & adjust accordingly.
