High temperature on a cold start

High temperature on a cold start
Please help......
2008 clubman S, I had a coolant leak at 62k miles so I just replaced both the water pump and thermostat.
Now after I burped the cooling system before I even start the car I get a temp a temperatures north of 240 degrees in 75 degree ambient air. The temp stays the same after the car runs for a few seconds.
The second stage fan comes on before the car is started. I know the coolant is cold so what gives????
I did try the old temp sensor out of the old thermostat housing to see if the new temp sensor was bad but it gives me the same wacky high temp readings....
Please help... I'm tired of driving my gas hog of a truck to work.
