Coolant leak and then none

I have a 2014 Mini Coupe with around 61000 miles. I was driving and received a yellow temperature light on my way to work, I was really close so drove on in and it went to a red temperature light as I parked. Fan was racing when i got out of the car. I went into work and at lunch checked the coolant level and it was low. I put some water in the tank since I had no coolant and managed to drive the car home with no issues. when i got home I filled the coolant to the appropriate level. Next morning i re-checked and the level was down at the bottom of the reservoir. i re-filled and drove to work with no issues. We i got back home the fluid was down around 2 inches from fill line. This continued to occur for about three days while i was trying to get in to see my mechanic.I drove it to the shop and he took an initial look at it, but saw no leak. I have an appointment to take it to him next week, but all of a sudden it is no longer leaking, the fluid is staying at the fill mark and the fan is not racing or running for an extended time when i get to my destination. What gives? Any Idea as to what is happening? I still plan to take it in to the shop but he is never going to believe me.

You didn't drain/flush the system recently did you? Sounds like there was air trapped in the system.

I would continue to monitor it, daily. If it is going down very slowly it could be a small leak at the thermostat housing/crossover tube. Not sure what your daily commute distance is but does it get to temperature daily. Could be leaking when at temp not cold.

No white smoke out the exhaust and as long as it is holding, not sure I would be concerned. If it was continuing to go down and no leak, I would be concerned about possible head gasket.

I have not drained the system, not sure why air would be trapped. My commute to work is about 15-20 minutes from where I live. No white smoke. I am still monitoring it. Thank you for your insight. I'll have the mechanic check these items.
