A/C questions- compressor whine, etc

So my a/c was blowing cool not cold, and would often take a very long time to get fairly cold (even on days only in the low 80s), so I figured I would use one of the refill kits you can find anywhere (I did it a long time ago successfully with my truck). I think I may have overpressurized the system, as the compressor would kick on for a second, then kick off, and the pressure would bounce around from a low of about 40psi, to a high of above 80 (measured at the low side connector). So I bled off some of the pressure from the lines, and now the pressure holds steady at 40 psi, and the a/c seems to be blowing fairly cold air and the compressor is running normally. Do the following temps (measured at the mid-body vents) seem right: about 60F at idle (set to max cold, recirc, etc), and then plunging to about 53F under load while in neutral (rpms brought up to about 3500 and held steady)?

Also, the compressor now whines under a higher rpm (starts around 3500), maybe I'm just now noticing it since I haven't really listened to the a/c up close while in my garage, for as long as I can remember. The whine goes away if I turn the compressor/aircond. off, so I know it's coming from there.

Lastly, the engine cooling fans seems to be running in it's louder 2nd stage more often, is that normal under high a/c use at idle?

Any help would be appreciated. The pressure seems to hold steady so I don't think there are any leaks, and again it's blowing cold, I just wasn't sure about the typical temps people see from the vents. I will also be taking it in for a regular a/c service soon, when I've got time this weekend. I just wanted some advice before then, thank you all.
