R56 Mini Cooper: best additional gauges
Oil pressure is a must add if you are going to add
(hmmmmmm does SCANG' report this??????)
and the other thing the classic had was water temp ......
if I was going to add another I'd go to AMPS .... one could argue VOLTS but either way you would want to see your electric's performance.
My current daily driver has water temp and oil temp and I find this redundant.

I do not find knowing oil temps redundant, the cooling system in my car has never gone above 235-7* in summer traffic, but the oil temp frequently goes north of 250* if pushed really hard and making high boost. In sport mode, the ECU changes parameters, and lowers coolant temp to keep the engine cooler but the oil is still passing through the turbo and getting heated there. For instance, driving a twisty mountain pass aggressively, it is not uncommon for me to see coolant temps in the 190* range with oil temps in the high 230s-low 240s. IMO, its good to keep track of both. It'd be easy to look only at coolant temp and think everything is fine when you could easily be cooking your oil.
Mini Cooper: best additional gauges
$5 App calked "Torque Pro" on an old Android phone coupled with a $15 ELM327 OBD2 Bluetooth adapter works for me. Very configurable. 6 screens max at 6 gauges = 36 gauges for $20!...
