So for a while I thought my rough normal launches from a stop were because of my tune. Car felt choppy and like it wanted to bog out. But now I'm beginning to feel it might be the clutch. What does a slipping/failing clutch feel like?!

failing clutch is usually found when accelerating very hard, and the rpm's increase or jump around while gaining speed. when tire spin is not a factor.

theres a couple ways to check, one involves putting the ebrake on when stopped, throwing the car in gear and releasing the clutch without it stalling.

another is travel at 30mph, put it in 6th, and put your foot to the floor.

hmmmm, well I guess I'll try those. Makes me think maybe this isn't the problem then.

Definitely doesn't sound like a clutch unless you have clutch chatter (very uneven wear of the clutch) or your flywheel is falling apart.

By bog down, you mean like it was starving for air/fuel? Does is seem to have full power in the higher RPM range? "Because of my tune"... Have you modified your fuel/air mixture? You may want to try checking your air filter and a fuel pressure test. Start with the easy stuff and work your way along.
