I got my mini a couple of days ago, and one thing I've noticed is when I'm going around a bend at a higher rate of speed and hit a bump or pothole the whole car will shift, almost as if to fishtail. I noticed it mostly when on on and off ramps. I dont think I'm going that fast maybe 40-45 mph, but certainly not excessive. What is this? And how do I counter it?

It's called bump steer. It's a combination of short wheel base (nothing you can do about that), runflat tires, (really very little to do with this, but the stiff side walls don't really help), and crappy shock and spring choices from the factory.
Unless you are prepared to spend some money to attempt to minimize it, you just better learn to deal with it.
Koni shocks and struts, paired with TSW springs have tamed a lot of it. getting rid of the runflats is next for me.
