The original thickness / height of the head

Can't find this info. I have a head, which was resurfaced, but not sure how many times. Are there specs anywhere, how high / thick should be the head originally?

By other words: how do I calculate how thick the head gasket should I use, if I don't have info about the head resurface?

No one, huh? Either way, I figured myself. First of all, I measured the volume of combustion chamber by putting white spirit into it (with leveled upside down head):

It took about 33 cc. I've adjusted it to 33.1 by using https://www.mopar1.us/compression.html and plugging all known OEM numbers into it. I measured the diameter and depth of dished area on OEM pistons, got ~55 mm x ~0.7 mm, i.e. 1.663 cc volume. Piston deck clearance was also measured right on the engine, got ~3.6 mm

Then, I've adjusted the parameters to my new numbers: bore 77.5, HG bore 78.5 and HG thickness 0.9144 (for Cometic Gasket Automotive C4308-036), not dished pistons (Wiseco) . And I am getting just very slightly higher CR (~8.4):

Meaning, I really need the thicker 0.036" (0.91 mm) HG (vs standard 0.65 mm one) for my build.

Yes. All I need is stock CR. Basically, just fixing the motor (with more reliable parts), rather than modifying it for higher perf.

Check manufacturer specs or forums; someone might have the dimensions!
