You should not need alot of torque to get the plugs loose. If you are using a standard 3/8" ratchet drive, consider a long-handled 3/8" driver, or go to a 1/2" driver with a size adapter if necessary. The increase in mass will give you more leverage. You can even slide a piece of pipe onto the end of the driver (or even use a torque wrench if you have to).

As for tightness in general, make sure you are changing your spark plugs when the engine is cold. Never do it with a hot engine. If that is not possible, at least give the engine an hour to cool down (more on hot summer days). If you are still having issues, get a can of PB Blaster and spray a small amount around the base of the plugs inside the tubes. Let them sit for 10-15 minutes. When you break them loose, use a rolled-up paper towel and "dab" it into the threads of the head. It's not going to hurt if some goes into the combustion chambers, but at least try to clean it up as best you can.
