Back in the day from mid 2005-2012 me and my husband would goto this place called 1FastMini which was a Mini Cooper specialist... I believe the name has changed over to E2 service in Winterpark. They where overpriced and rude. Not sure if they're still inservice. I just purchased a JCW Paceman and was looking for a Mini tuner shop as well in the Orlando area.
I think I'm going to keep Orlando Mini as my place of service. Anyone else can chime in?

RMW (Revolution MINI Works) is a tuner and maker of MINI race parts based in CA, Jan the owner makes some of the best parts out there, and by best you need to read Expensive but good.
Origin Motors is an Orlando Local custom shop that works on pretty much anything that is specialized, I have a LinkECU G4+ stand alone ECU I am going to have them tune for one of my 2006 MCS cars.

What do they charge for tuning? They look quite expensive according to their website LOL. Im asking because Im in sarasota, and will need a tune soon. I talked with RMW and they sell a nice cam/tune package I am considering adding into my build.

So, their email said they could do it but focus more on R56/F56's and wanted me to consider Precision Auto Werks PAW in Miami, which leaves me to believe they don't want to do it or the tune wouldn't be that great. Basically I will go with Jan over at RMW, they have already been helpful with giving me advice, and I don't think 1k bucks on a cam/tune package is all that bad. Lou from prototype said Jan can be difficult to work with, but thats ok by me I am in no hurry.
