Parts can be ordered from MINI dealers, various NAM vendors, Pelican Parts, or ECS Tuning.
People have used vinyl dye (or was it paint?) to color these parts. Others have covered them with various materials from plaid to Alcantara.

I saw that PDF, but that shows how to put the chrome trim. I would want to change the yellow in those photos, say to a red color line. IE: change the two door colored "handles" + the colored chunks under the secret compartment, etc.
It's mostly the same process.
The steps are:
1. Remove dash
2. Remove vent covers
3. Remove center console cover
4. Remove old color line
5. Install new color line
The pieces in the door just pop off.

I recently wrapped my 3 piece colorline in alcantara and used these two vids for reference...hope this helps.

FYi for future readers I confirm that the parts are all purchasable -- on a clubman they are:
two front armrests
two rear armrests
three dash parts
roughly speaking, each is ~$100
